Bharva Baigan/Brinjal curry

Bharwa Baingan/Brinjal curry is a traditional dish in Indian cuisine. Bharwa Baingan dish is prepared in various ways. Baingan is made as a dry sabzi or cooked in a gravy. The gravy which is used to prepared the curry is made using onion and tomato paste or with peanuts and dry coconut.

How to make delicious Bharwa Baingan

Varieties of Baingan are available in the market. Large size baingan weighing half to one kilo is often used for preparing Baingan ka bharta. Small size Baingan are mainly used to prepare Bharwa Baingan or sabzi. Black or green Baingan both can be used for making Bharva Baigan. Each one differs a lot in taste. I’m sharing Bharwa Baingan recipe  made in Maharastrian way, using green Baingan.

Ingredients:

  • Baingan(small green) – 8 to 10
  • Groundnut – 1/2 cup
  • Dry whole red chilli – 8 to 10
  • Coriander seeds – 1 tsp
  • Cumin/jeera – 1 tsp
  • Saunf/ fennel – 1 tsp
  • Oil – 2 tbsp
  • Salt – to taste
  • Coriander leaves – to garnish

Method:

  • Wash the Baingan. Make a slit slightly at the center, to create a space for stuffing the masala.

  • Heat 1 tsp of oil in a kadhai.
  • Add the Baingan. Let it cook till baingan is soft. Add little water for cooking. Season with salt.
  • Keep it aside and let it cool.

Bharva Baigan/Brinjal curry

  • Dry roast groundnut, coriander seeds, cumin/jeera and saunf separately. Roast the whole red chilli using few drops of oil. Let all the ingredients gets cool down to room temperature.

  • Grind the roasted ingredients into a coarse powder.

  • Stuff the Baingan with this mixture and keep aside the remaining mixture for making gravy.

Bharva Baigan/Brinjal curry

  • Heat the remaining oil in a kadhai. Oil should not be too hot.
  • Now add the stuff Baingan and stir. Add little hot water and stir. Repeat twice. 

Bharva Baigan/Brinjal curry

  • Add the remaining dry mixture if you want to make gravy.
  • Adjust the water according to the required consistency and cook for 5 minutes.

Bharva Baigan/Brinjal curry

  • Season with salt.
  • Garnish with chopped coriander leaves.
  • Serve hot.
